Keep components separate
Cook protein/carb/veg separately and plate them as separate sections.
Put veg on the side
If mixed veg is a dealbreaker, serve it separately or remove it entirely.
Add crunch
Toast/bake longer, or add crunchy toppings (croutons, crisped chicken, toasted breadcrumbs).
Make it firmer
Use less liquid or bake into oat bars/bakes to reduce the mushy texture.
